Did I Do Something Wrong??? April 9, 2010 N. Fornario Being a guy, I figured a pan is pan, you can cook anything in it. I cooked Teriyaki chicken at 350 degrees, the pan has stains and a garlic odor that won't come out not matter how many times I've washed it. Maybe it's only for cakes and such (?). I will still use it, hoping the odor doesn't affect the food. Can someone tell me if I messed up? I gave it a three, since if it is only for cakes, it should mention that for us clueless men out there. Maybe I should've waited till my wife got home from visiting her mom before I ordered this.

I bought these pans a while back and have used them a few times. They work well, although I might suggest greasing them anyway just in case, I did have an instance where the cake stuck to the bottom anyway.
They work well and seem to bake evenly, the only thing you need to be aware of is that since they are made from a soft, floppy material, you need to put a large cookie sheet or other very flat surface underneath them, otherwise they'll come out uneven. They are very soft so it isn't possible to pick them up by the little handles and place them in the oven; you'll just end up dumping cake batter all over your kitchen.

I bought this as part of a set that also included a 6 muffin pan and two small loaf tins. I have used silicone bakeware for many years for breads and cakes because they cook evenly and release easily. One of the biggest advantages is that you can peel them off (although you still have to be careful when doing that).
This Wilton 9 inch cake pan is not the best. The silicone is a bit grippier than my others, both of which are co-incidentally rated to over 550 degrees. I am left wondering whether this grade of silicone is inferior. Obviously 500 degrees is plenty for most applications, but I expected the pan to release my cake a little more easily than it did. In addition, this is not a very generous pan. It claims to be 1.5 inches deep, but that seems a little optimistic to me. All in all, it's still silicone and will do a fine job, but I have been happier with other purchases (specifically Horwitz brand, which is much harder to find!).
